Dubai-based Mirzam Chocolate Makers choose single-origin cocoa beans to create diverse flavors inspired by the maritime Spice Route, which ran from the west coast of Japan across the Middle East to Europe. These traders were sailing the oceans hundreds of years ago gathering valuable ingredients to sell to European buyers. Mirzam uses granite wheels to grind the roasted beans for several days in a process which slowly decreases the molecule size to create incredibly smooth chocolate with no need for additional additives. Mirzam also collaborates with local artists for its branding and packaging.
